Observation (CORRECTED DURING INSPECTION): 1) Large amount of bacon left cooling on counter. Bacon was piled quite deep - about 6 inches. 40 Celisus in center of pile and 26 Celsius on edges. This indicates that the bacon is cooling very slowly. No time tracking was being carried out and there was a shift change as well. Follow your food safety plan and cool all items quickly. Use shallow metal pans and place in fridge.
2) Bacon under hot holding in grill area was 35 Celsius. Hot holding unit was pushed to the side. Bacon discarded. Make sure that your hot holding unit is working properly and all hot foods are at least 60 Celsius.

Observation (CORRECTED DURING INSPECTION): Scoop stored in dirty water in insert beside grill. 14 Celsius. Do not store utensils in water unless lit can be kept very cold (<4 Celsius.) Insert emptied during inspection; scoop sent to dishwasher.

Comments

Dishwasher sanitizer is 100 ppm. Good.
Fridges are all <4 Celsius and well organized.
Sanitizer is 200 ppm quats. Sanitizer is in active use for cleaning cloths.
No sign of pests.
Overall sanitation is ok.
Note that some areas of the floor require re-grouting - notably by the grill and dishwasher.
