Observation:
The handwashing sink is draining very slowly and a sign is posted to not use. There is no other handwashing sink available, within close proximity, for staff to wash their hands.
Corrective Action(s):
Immediately have the handwashing sink fixed so staff can wash their hands prior to starting work, and prior to putting new disposable gloves.

Observation:
The recirculating pipes, for the seaffood tanks, have accumulated mold and mildew on them. Food is being processed in the safe room as the recirculating pipes. The food could become contaminated by mould/mildew spores in the air.
Corrective Action(s):
Clean the recirculating pipes to remove the mould/mildew. Incorporate this into your cleaning schedule, so it is done on a regular basis.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers below 4C; freezer below -18C; thermometer present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer was 200ppm, and test strips present.
- Sanitation level is good. No signs of pests. Fly lights present and away from food processing areas.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on racks, platforms or shelves.
- No expired foods in use or for sale. FIFO rules being followed
