Observation (CORRECTED DURING INSPECTION): The following hot-held food was below 60 degrees C for less than 2 hours:
-Three inserts of dimsum (near 33 degrees C)
-Two bbq ducks
-Two bbq chickens
-One insert of chicken for less than 2 hours and one chicken leg for more than 2 hours.
Note: Steam was not reaching the dimsum in the hot-holding unit as the bottom component was fully covered.
Corrective Action(s): Hot-held food below 60 degrees C internally for less than 2 hours was reheated to a minimal temperature 74 degrees C during the inspection and then hot-held at or above 60 degrees C. Single chicken leg below 60 degrees C for more than 2 hours was discarded.

Observation: Sanitizer dispenser near the cooking area was not dispensing 200 ppm QUATS sanitizer. 0 ppm QUATS sanitizer was measured from the dispenser.
Corrective Action(s): Repair the dispenser so that it is able to dispense at least 200 ppm QUATS sanitizer; Correct within 2 weeks and contact the district Environmental Health Officer for a follow up inspection. In the meanwhile, use the other 3-compartment sinks and other QUATS dispensers for dishwashing and sanitizing purposes.

Handsinks were adequately supplied.
Coolers were at or below 4 degrees C.
Walk-in-cooler returned to a temperature at or below 4 degrees C by the end of the inspection.
Freezer temperatures were satisfactory.

Temperature records were being maintained.
200 ppm QUATS was available from two other dispensers and in the spray bottles.
No signs of recent pest activity were present.
Manager had a FOODSAFE Level 1 certificate valid until 2022-06-24.

Note: One cooler was not in use and was empty of food. Person in charge stated that they are aware that there is a leak inside it and have placed an order to repair it. Do not store food inside this cooler until it is maintained at or below 4 degrees C and the leak has been repaired.
