Observation (CORRECTED DURING INSPECTION): Hollandaise sauced in a 10L container was left under ambient room temperature for cooling. Internal food temperature measured at 38C.
Corrective Action(s): Discussed the cooling procedure with the chef. Food should be cooled in small, shallow container and inside a functional fridge after steam is off. Move the hollandaise sauce into the walk-in cooler immediately.

- Under and behind the cook line at the kitchen area.
- Under the shelving units at the dry storage area.
