Observation: Dishwasher is broken again. Observed leaking all over floor at dishwash station. Staff not using. Only 2 compartment sink available for ware washing. Implementing 2 sink method of dishwashing only acceptable as a temporary basis.
Corrective Action(s): Implement 2 sink manual dishwashing for now ensuring staff are properly implementing proper manual 2 sink dishwashing techniques. Repair or replace unit as long-term solution. Alternatively, remove dishwasher completely and switch to 3 compartment sink and implement proper wash rinse sanitize and air dry techniques through 4 step process.
**Re-inspection in ten days. Send plan of action related to long-term solution for this unit.

Observation: Many of the blender lids observed with build up of organic matter or similar substance. Some hard and possibly baked on and some with slimy consistency.
Corrective Action(s): All blender Jugs must be thouroughly cleaned and sanitized daily to prevent build up noted. Review at next inspection date.

Comments

Cooling units less than 4 C.
Under counter freezers -10 C. reviewed temp logs and all freezers noted within acceptable range of -17 or -18 C.
Display/deli cooler first measured 9 to 10 C, but jumped down to 0 to 1 C. Monitor. Temp logs ok.
Sanitizer at sink and in spray bottle at 200 ppm. OK.
Make sure to keep paper towels close by all handwash stations for ease of access. If dispensing units not working, find alternative hands-free dispensing system.

Staff confirmed Foodsafe training. Certificate posted.
