Observation (CORRECTED DURING INSPECTION): Cooled leftover rice left out at room temperature for further processing into fried rice. Internal food product temperature at 14 degrees C.
Corrective Action(s): Discarded. Ensure rice is cooled from 60 to 20 degrees C in 2 hours then from 20 to 4 degrees C in 4 hours. Do not let rice sit out for more than 2 hours at or above 4 degrees C.
