Observation (CORRECTED DURING INSPECTION): Croissant Sandwich Cooler temp was 10 deg. C. It's directly across from oven. Hot Cookies were cooling in front of the cooler. General area was hot. All Sandwiches moved to another cooler. As discussed, do not use oven in peak hours of heat if possible. Bake cookies in the morning or evening. Ensure temp. of cooler drops to <=4 deg. C before placing PHF's in it.
