- All freezers- walk-in, display ice cream and upright freezer- are measured at less than -18C
- Bar cooler for milk at less than 4C
- Dipper well available and in use for all ice cream scoops
- Ice machine is maintained in clean and sanitary condition
- Sanitizer solution in three compartment sink and in bucket is measured between 100-200ppm chlorine residual
- No evidence of pest activity is noted

- General sanitation is satisfactory
