Observation: Rodent droppings observed in the following areas:

-BOH between the brick wall and drywall
-BOH around and under storage shelves
-BOH dry storage room
-Under customer bench (6 seater) in the back seating area
-Accessible washroom floor/wall joints
-kitchen near panini press
-on shelf under microwave
-behind and around the dishwasher
-around the grease trap
-under the metro rack holding alternative milks and oils

obtain professional pest control services, have an assessment done of the facility for entry and harbourage areas, set traps, and have them service the facility every 2 weeks or more frequently. Have pest control service report copies available on site for inspection in the future

=Prep cooler (3C), FOH undercounter cooler (1C), FOH glass door cooler (4C) BOH sliding door cooler (4C), BOH undercounter cooler (2C), measured < 4 degrees C.
=BOH black chest freezer (-23C) and BOH double upright freezer (-15C)
=High temperature dishwasher had a final rinse temperature of 71.3 C at the dish surface (minimum 71 C required for proper sanitizing)
=Bleach sanitizer solution at 100 ppm chlorine available in spray bottles.
=Ice machine maintained in a sanitary manner
=Staff hygiene satisfactory at the time of inspection; FOODSAFE level 1 certification could not be verified at the time of inspection. Have certificates on site for review.
=Permit posted in a conspicuous location

note 1: operator must remove scrap and renovation construction material in the back of house. If these items are used for current renovations, they must be stored in a manner that prevents harbourage sites for pests
note 2: outstanding permit fee letter delivered. operator must pay permit fee of $150 within 10 working days. failure to do so will result in the closure of the facility
