Follow up inspection:
-Hot-holding case was empty of food at the time of inspection. Staff informed they had sold out by approximately 2:30 PM today.
-Hot-holding record log from today indicated that the BBQ meat products were hot-held at or above 60 degrees C.
-Staff informed the hot-holding unit had been kept plugged in to maintain temperature at or above 60 degrees C.
-Staff informed they have been following the proper manual pre-scrape, wash, rinse, sanitize, and air dry method for preparation utensils and storage containers.
-No ware-washing was occurring at the time of inspection.
-Manual ware-washing method (2-compartment sink) sign was hand delivered.
