Observation (CORRECTED DURING INSPECTION): (A) Concentration of QUAT sanitizer in the spray bottle was at 50 ppm.
(B) Wiping cloth that was used to clean steaming wand was stored in a empty insert without sanitizer.
Corrective Action(s): (A) Correction: Staff refilled with new sanitizer with 200 ppm QUAT. Make sure the sanitizer is strong enough to kill the bacteria on food contact surface (200 ppm QUAT).
(B) Correction: Always keep the cloth in the sanitizer bucket with 200 ppm QUAT when not in use. Steaming wand is considered as a food contact surface that needs to be cleaned and sanitized each time after use.

This inspection done by EHO student.
Comments:
-Hand sinks are fully equipped with liquid soap, paper towel and hot/cold water.
-Undercounter coolers range from 1 deg. C - 3 deg. C.
-Walk in cooler 3 deg. C
-Walk in freezer -14 deg. C
-No obvious signs of pest activity observed.
-General sanitation is satisfactory.
-Low temperature dishwasher chlorine residual: 100 ppm.
-Ice machine is clean and in good working condition.
*Make sure temperature log is up to date.
*Make sure milks and creams for customers at the self-serving area are replaced with new ones at least every 2 hours.
