Observation (CORRECTED DURING INSPECTION): Grilled onions made at 8am left out to cool for more than 2 hours. The temperature of the onions was measured at 30C at the time of inspection.
Corrective Action(s): Discard grilled onions immediately to prevent pathogen growth. Operator is aware of cooling procedure required

Timers are used for hot holding units for when to discard food
Room temperature holding of food is recorded and discarded after 2 hours
Thermometers present and records are maintained
High temperature dishwasher achieved 73.0C at plate level after final rinse cycle (temperature of final rinse is checked with thermal labels daily)
Quats sanitizer measured at 200ppm in sanitizer buckets with wiping cloth
Food storage is 6"off the floor and covered
Vent hood service due in May 2024
No signs of pest infestation
