Observation (CORRECTED DURING INSPECTION): Dishwasher dispensing 0ppm chlorine in final rinse. After priming dishwasher still dispensing 0ppm chlorine in final rinse. Once sanitizer container was changed and unit reprimed dishwasher was dispensing at approx. 70ppm chlorine.
Corrective Action(s): Re wash/sanitize all utensils as it is unknown how long dishwasher was not properly sanitizing as monitoring records for the kitchen have not being maintained for months.

Observation: Entire kitchen from floor to ceiling requires cleaning due to food splatter/grease buildup. Specifically, entire exhaust canopy requires cleaning which includes all grease diffusers due to heavy grease build up. Clean topside and beside all kitchen cooking equipment due to heavy grease build up. Floor under all cooking equipment, coolers, prep counters, dishwasher requires cleaning due to food product build up/grease build up. Underside of all shelving especially shelving above food preparation surfaces requires cleaning due to food splatter buildup. Exterior of papertowel dispenser and exterior of soap dispenser requires cleaning.. Floor inside walk in cooler requires cleaning due to food spillage buildup. Exterior of fire extinguisher requires cleaning due to food product buildup.
