Observation (CORRECTED DURING INSPECTION): As per operator, atlantic salmon is bought fresh from 21 Century, filleted and then frozen for at least 2 weeks before use for sushi. However, there are no date stamps on the fillets of fish. The temperature of the chest freezer was -21 degC.
Corrective Action(s): Start putting date labels on the frozen fish so that it's clear how long the fish are being frozen before use.
