Observation (CORRECTED DURING INSPECTION): Sauces held in inserts next to grill were measured to be at 13C.
Corrective Action(s): Lobster sauce discarded at time of inspection. Other sauces with dairy also discarded.
Ensure enough ice is added to the wells such that inserts of sauce can be submerged in the ice. Ice must be replenished throughout the day as well.

Observation: Many cutting boards were significantly scored and stained.
Corrective Action(s): Replace cutting boards with new ones. Scored, unsmooth surfaces cannot be properly cleaned and sanitized.

Observation (CORRECTED DURING INSPECTION): Bar glasswasher sanitizer supply was empty.
Corrective Action(s): Staff replaced sanitizer supply at time of inspection. 12.5 ppm iodine detected after rinse. Ensure to check supplies and replenish as needed.

Observation (CORRECTED DURING INSPECTION): Hand sink beside ice machine was missing paper towel. Paper towel dispenser was broken.
Corrective Action(s): Install new dispenser for this hand sink. Ensure all hand sinks are always supplied with liquid soap and paper towels.

- Floor of walk-in cooler and keg cooler require cleaning

- Prep drawer coolers under grills require cleaning
Corrective Action(s): Clean and sanitize all areas noted above, and do so on a weekly basis.

Comments

- All other hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer solution available at 200 ppm in buckets, spray bottles, and from dispensing unit
- High-temperature dishwasher reached 73C at dish surface during rinse cycle
- All coolers were at 4C or colder
- All freezers were at -18C or colder
- All hot held food items were above 60C
- Food storage practices satisfactory, good separation of raw and ready-to-eat food items
- Cleaning in dish pit has improved, however drain flies still present (number of drain flies have decreased). **Continue with regular pest control and deep cleaning of drains and entire dish pit area (floors, walls above and below counters, storage shelving, garbage bins, and dishwasher)
- General sanitation requires further improvement.
