Observation (CORRECTED DURING INSPECTION): Several bags of frozen chicken wings defrosting on top of freezer.
Corrective Action(s): Defrosting must never be done at room temperature. Place items in the cooler, under constant cold running water or in the microwave to defrost.

-hand sink fully equipped
-all temps met health requirements, temp logs are maintained daily for most coolers. Ensure all coolers and freezers have temperature recorded at least daily
-bleach at 100ppm
-glasswasher at 50ppm Cl
-Dishwasher at 71C at dish, however dishwasher is leaked a large amount of water onto the floor with each cycle.
-general sanitation good
-keep copies of Foodsafe onsite so inspector can verify expiry date
