Paper towels available on the shelf Paper towel dispenser observed not working at front sushi bar hand sink. Paper towel available on shelf adjacent to hand sink. Paper towel dispenser observed not working in employee washroom. Paper towels available on top of the dispenser One wire rack shelf inside the walk in cooler observed to be flaking paint due to rust. Corrective Action(s): Place paper towels in the dispensers and ensure thr dispensers are in good working order Replace wire rack shelf unit. This is to be done within the next 2 months. Violation Score: 9 311 - Premises not maintained as per approved plans [s. 6(1)(b)] Observation: Missing floor tiles in front of the dishwasher observed not replaced. Monitoring logs being recorded Dishwasher at 72c (At plate level). Soap dispensed into wash cycle Deep fry batter observed being stored in the cooler Miso soup being hot held at 63c. Wiping cloths observed stored in bleach sanitizer at 100ppm *Recommend using Quat as a sanitizer for wiping cloths as Quat does not impart any odor issues. Concentration will need to be a minimum of 200ppm and concentration tested using Quat test strips. All freezers cold holding at <-18c All coolers cold holding at <4c No pest issues observed Ice machine observed to be clean
