3 compartment sink prepared at time of inspection appeared to have chlorine (bleach) sanitizer mixed with soap. Never mix chemicals!

Small improvements to be made:
- use scoops with handles and make sure the handles are left outside the product
- knives at cutting station are currently getting stored in water. Please add ice cubes to prevent bacterial growth. Another option is to turn over this entire container at least every 4 hours
General sanitation of facility is good. No evidence of pests
Bleach rag bucket on site tested at 100ppm. Good
Discussed 4 hour rule with band saw. Operator says a full clean is done after each use as meat is easier to remove. Good! Suggest using a spray bottle for sanitizer as it gets a greater area
Meat grinder in good sanitary condition.
