Observation: Noted box of potatoes with onions on the ground.
Corrective Action(s): Keep all foods stored off the ground at all times.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Screen over back door has not been replaced. Screen does not reach the ground and it was floating in the air in the wind (sides not touching the wall).
Corrective Action(s): Keep back door closed until a proper screen that fits over the back door is obtained. Screen should not have gaps or spaces in order to prevent the entry of pests.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Raw wood shelving units under counter beside dish washer still present. Staff member said he thinks operators are still looked to order new shelving units instead of painting these. All other raw wood in lower shelving units of walk in cooler and new board installed across dish washer have been painted and the chipping counter beside ice machine has been replaced with stainless steel.
Corrective Action(s): Although raw wood is minimal, the surface needs to be finished to render it smooth, non absorbent and washable. This will be followed up on during the next routine inspection.

Observation: Broken tiles noted on the ground by the dish washer area.
Corrective Action(s): Repair/replace broken tiles to render the floor smooth and washable.

Comments

- Follow up inspection conducted to check on outstanding items and ensure correction order has been complied with
- Sanitizer in container was at 100ppm and did not appear to be mixed with soap
- Most raw wood has been painted and the chipping counters have been replaced with stainless steel material.
** Noted hand sanitizer at hand sink in food preparation area. Soap also available. Highly suggest removing hand sanitizer to avoid any staff confusion with use of soap. Hand sanitizer is not a substitute for hand washing in a food premises.
