Observation:
1) (CORRECTED DURING INSPECTION) Quat sanitizer bottles and dispenser measured 0ppm quats.
2) According to the staff, the dishwasher is no longer used and equipment is being washed manually without a sanitize step.
Corrective Action(s):
1) Tubing to dispenser adjusted; dispenser measured 200ppm quats. Spray bottles refilled. Test strips available; ensure that the temperature of the sanitizer is between 18-24C.
2) To properly wash and sanitize equipment, you must wash, rinse, then sanitize. As this facility was approved with a two compartment sink and a dishwasher, all equipment must be washed in the dishwasher with sanitize cycle.

Dishwasher to be tested at follow-up inspection as it requires time to heat up to proper temperatures. Waterproof thermometer is not available; thermolabels provided for the short term. Dishwasher must be tested regularly and a temperature log kept.

Observation: Temperature logs have not been kept as per previous inspection. Only 1 day in May, 7 days in June, 2 days in July and 1 day in August recorded.

This is a repeat violation.
Corrective Action(s): Begin temperature logs starting today. Temperatures must be recorded twice daily.
