Organize storage at the back of the premises. Do not store items directly on the floor, particularly the flour in the paper sack. Store items on shelving units rather than on top of boxes or inverted soft drink crates/holders (wooden shelves should have a washable surface). Clean bottoms of walls surfaces and edge of the floor near the walls. General sanitation is satisfactory. No obvious signs of pest noted. Handwashing stations are in satisfactory condition. Temperature of hot and cold holding units are satisfactory. Thermometers are available. Probe thermometer has been purchased. Premixed quats sanitizer in a spray bottle is being used. Dishwasher rinse temperature reached 160F/70C.
