Food not cooled in an acceptable manner [s. 12(a)]
Observation: Hot Noodle soup ( Pho) @ 70 degrees C was being cooled in a big plastic bucket in the cooler.
Correction: You must cool hot soups in the original cooking pots using ice water bath in the sinks. Once it is cooled to room temperature it must be transferred to the coolers. Ensure foods are cooled fro 60 to 20 C within 2 hours and then from 20 to 4 C within the next 4 hours. (immediately).

Dirt and grease build up has been removed from all shelving and equipment.
A thorough cleaning has been performed throughout the premises.
The old malfunctioning freezer has been replaced by new freezer; registered -18 degrees C.
Quats sanitizer test strips have been purchased and are in use. Quats sanitizer tested 200 ppm.
The operator has renewed her FOODSAFE level 1 certification.
Raw meats and poultry are now stored below vegetables and other ready to eat foods.
