Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Several sandwich prep cooler inserts above 4 C, following internal temperatures taken: roast beef 11 C, teriyaki chicken 10 C, pepperoni 10 C, olives 13 C. Morning temperature logs were not recorded, previous day temperatures indicate inserts were all below 40 F.
Correction: Directed staff to discard all potentially hazardous foods stored in unit for more than 2 hours. Food volume in inserts generally low (below 1/2 mark). Continue to keep small volume of food in inserts so that contents are turned over in < than 2 hours; all inserts must be stored on ice. Replenish from undercounter cooler when necesary. Verify with your probe thermometers that food products are stored < or = 4 C (40 F).

-Display sandwich prep cooler has been serviced and displays 44 F on outside display. Internal temp of food in inserts noted at 4 C
-CORRECTION ORDER Rescinded - resume regular operation
**Continue to monitor cooler unit - once cooler is unable to maintain 4 C or less ensure it is repaired and food is monitored closely

Note:
-Ambient temperature of suite is still very warm - AC still not in full working order - High temperatures of suite is negatively impacting the cooler units and making them work much harder
**Property Building Manager informed EHO over the phone the AC system repair service will be completed by end of day
