Observation: A number of flies were noticed in the kitchen trailer especially on the shelf above the sinks. Dead flies were also observed behind equipment. Fly specks were also noticed around the ventilation opening in the Slushie trailer
Corrective Action(s): Both trailers: You must remove all items, supplies and equipment and clean all shelves, walls and surfaces with a rag soaked in hot soapy water followed by sanitizing with bleach cloth. Also, remove fly fecal matter from the tube lights. Recommended to install a UV fly trap near the entrance to the kitchen trailer. Ensure to regularly clean any spills off surfaces to discourage flies.
-Ensure to instal weather stripping or foam to seal the gap around the service window in Slushie trailer (April 22, 2019)).

Corrective Action(s): Clean all cabinets and floor underneath equipment to remove dirt and debris. Clean the dry storage container to remove dead flies from behind the deep freezers ( By April 22, 2019).

Comments

Following items are still outstanding from the previous inspection.
-Clean around the hot water tank and upper shelves on the north side of the mobile kitchen to remove dead flies
-Ensure to install a UV vector fly trap within the kitchen mobile unit (By July 15, 2018)

* Recommended fixing the ceiling and repainting it before May 15, 2019.

Routine inspection:
All coolers < 4 C.
Deep freezers < -18 C
Preparation cooler below 4 C.
Slushie trailer coolers below 4 C.
Pasta bowl storage coolers below 4 C.
Chlorine bleach sanitizer in the spray bottle tested 200 ppm. Ensure to label this spray bottle.
Liquid soap and paper towels available at the hand sink.
Hot holding of soup and gravy > 60 C.

*Ensure that slushie hopper and the agitators are cleaned and sanitized in a bigger sink located in the facility.
