Observation (CORRECTED DURING INSPECTION): Rice was observed in the rice warmer with an internal temperature of 51 deg C. Staff stated that the rice was cooked 1 hour ago.
Corrective Action(s): Staff placed the rice in a cooler unit for cold storage. Reminder: cool foods from 60 deg C to 20 deg C within 2 hours and from 20 deg C to 4 deg C in an additional 4 hours.
