303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer was measured above 200 ppm in the spray bottle as the chlorine test strips were blanking out. Corrective Action(s): Staff member setup 100 ppm chlorine sanitizer (1/2 teaspoon bleach per L of water) at the time of inspection. Violation Score: 5

Comments

Handsinks were adequately supplied with liquid soap, hot and cold running water, and paper towels. Prep. cooler was at 3.8 degrees C (4 degrees C or less). Upright cooler was at 3.1 degrees C (4 degrees C or less). Upright freezer and ice cream freezer were at or below -18 degrees C. Dishwasher final rinse temperature was at least 71 degrees C (75.3 degrees C) at the plate. Dishwasher display panel was repaired and in working order at the time of inspection. Reminder: Ensure the dishwasher temperature reaches at least 180 degrees F at the manifold for at least 10 seconds during the final rinse cycle. 100 ppm chlorine sanitizer was available in a bucket. Ice machine was in a clean condition. Dipper well was in use at the time of inspection. No signs of recent pest activity were observed at the time of inspection.
