Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (1) No sanitizer buckets were in use on the cook line and the one in the servery area had no detectable sanitizer. Sanitizer buckets were placed during inspection.
2) Chemical used for sanitizer buckets is NOT FOOD GRADE. Detergent-sanitizer is being used; label indicates that this product must be rinsed off of food contact surfaces before use which indicates that it is not food grade. Replace sanitizer chemical by tomorrow with a food-grade product.)

Restaurant is using Diversey D10 sanitizer, an approved food contact surface sanitizer; However, the sanitizer concentration was too strong when measured, and also there is an air-break in the line, which is causing the machine to dispense only water for the first few seconds when the dispensing button is pushed - this caused the sanitizer bucket to have zero detectable sanitizer. corrected.
1) Have your chemical rep decrease concentration of sanitizer being dispensed: 200ppm quats sanitizer should be dispensed from dispenser.
2) have your chemical rep adjust/fix tubes and lines so that there is no loss of suction from the concentrate bottle (or you can have staff push button for several seconds before filling buckets and spray bottles)
