Observation (CORRECTED DURING INSPECTION): Observed one sanitizer spray bottle and one sanitizer bucket solution at 50ppm Quats. The wiping rags within the bucket solution were not submerged in sanitizer.
Corrective Action(s): Replace sanitizer (Quats) solution in spray bottle and bucket and ensure rags are submerged within solution.

Comments

Note - Ensure routine cleaning underneath equipment and hard-to-reach areas, including the cooking line and area surrounding the dishwasher.
-Observed paper towel ran out during inspection and was immediately replaced
-Observed proper hand-washing procedures by staff

NOTES:
-Dishwasher was found at 100ppm Cl
-Walk-in freezer found at -18.5°C
-Standing freezer found at -19.2°C
-Prep-coolers found at 3.9°C. 3.7°C, 2.9°C respectively
-Walk-in cooler found at 3.8°C
-Bar area coolers not working at time of inspection. Cooler has already been emptied. One cooler contains only beverages. Not potentially hazardous.
→Operator says a service order has been made to make repairs.
-Beverage cooler in outer area found at 3.9°C
-Hot holding unit found 64.1°C
-Pest control measures in place
-Operating permit prominently displayed
-All hand sinks had liquid soap/paper towel, and hot/cold water
