Observation (CORRECTED DURING INSPECTION): Several food items probed to be 10C or higher. Food temperatures averaged 10-20C. Foods in the following area were discarded:
1) Standup cooler by dimsum steamer: all foods discarded. Temperature measured 12C.
2) Standup cooler behind the prep table in the dimsum area: all foods discarded except the chinese donut. Temperature measured 14C.
3) Prep cooler by the grill line: 6 bowls of soaked vegetables and mushrooms were discarded. Temperature measured 16C.
4) 4 containers of soaked soft noodles on the table. Temperature measured 20C.
5) Container of bean sprout on grill line prep table. Temperature measured 16C.
Any foods that are potentially hazardous or perishable are to be stored in coolers at 4C or less or hot held at 60C or higher.
These include raw meats, cut and soaked vegetables, soft noodles that are not dried.
Corrective Action(s): Discard all noted products. Ensure all potentially hazardous foods are stored 4C or less. Further non-compliance may result in enforcement action. Date to be corrected: today

Observation: 1) Wiping cloths are stored on the table. These need to be stored in sanitizer solution. Current lemon bleach product states product is not meant for household cleaning. Proper bleach product must be purchased.
2) Rice scoop stored in standing water.
Corrective Action(s): 1) Store wiping cloth in sanitizer solution of 100ppm chlorine. Approved sanitizer must be used and purchased.
2) Store rice scoops in ice.
