Observation (CORRECTED DURING INSPECTION): A container of fried rice improperly cooling in too thick of a container -temperature at 37 deg C for over an hour
Corrective Action(s): Cool solid foods in wide-shallow containers with a layer thickness of 1 to 3 inches

Observation: A number of the door sweeps are damaged and ineffective in preventing mouse entry such as into the boiler room -also indicated on the Orkin Pest Control report from October 25th

There are possible rodent entry points behind the dishwasher and the boiler room

Operator is using old plastic milk crates for lifting food buckets off the floor
Corrective Action(s): Correct ALL structural issues described in the Orkin Pest Control report -a follow-up inspection after their next visit will verify this.

Seal the rodent entry points (advise from your Pest Control)

Remove ALL of the plastic milk crates use as shelves -you will need to be place the food buckets on shelf risers or multi-level shelving -this will facilitate cleaning and monitoring of pests underneath

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The rodent issue has worsened since the last visit in May -observing mouse droppings in most areas of the facility -particularly in the following areas
-bakery floor areas
-behind the cooking line
-in boiler room
-processing room

Operator is not leaving any open foods out overnight either placing in the fridge/freezer or rodent proof containers
Did not see any direct food contamination or package alteration due to rodents
Orkin Pest Control coming in bi-weekly
Corrective Action(s): Clean and disinfect with bleach ALL areas with mouse droppings -check EACH MORNING with a high powered flashlight for cleaning.
Keep ALL lightly packaged foods (ie. soft plastic, paper, nylon...) in rodent proof containers lids on tight for overnight storage
If droppings are observed around food areas then all exterior container surfaces will need to be cleaned and sanitized with bleach

Observation: Tin foil is being placed on shelves and as a deterrent against the mice in certain areas of the facility (??)
Corrective Action(s): Remove all these disposable materials unsuitable for shelf liner and not a detractant against rodents -follow the directions of your pest control
