Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: What appears to be biofilm and/or mildew was observed on the interior surfaces of the ice machine.
Correction: Discard ice. Ensure interior surfaces are properly washed and rinsed to remove all biofilm/mildew, then properly sanitized. Ensure ice machine is properly cleaned and sanitized at a frequency required to prevent accumulation of biofilm/mildew, which may potentially contaminate ice. Date to be corrected by: Today.

Follow up to Rpt # MBEK-BEZQ45.

- Ice machine observed to be in clean condition
- Bleach water sanitizer available at 100 to 200 ppm chlorine in front and back areas
- Improper glove use and/or improper hand washing practices were not observed at the time of inspection.
- No scoops or bowls were present within the dry storage bins at the time of inspection. Reminder: If scoops are stored in dry storage area, ensure conditions noted on previous routine inspection report are met.
- Some areas noted under violation code 306 on the previous routine inspection report have been cleaned, including shelving located behind the sushi prep area, exterior of wall-mounted knife store box, and door seals of prep cooler and under counter freezer.
Follow up inspection to be conducted for outstanding items: violation codes 306 (remaining items), 307, and 308 noted on the previous routine inspection report.
