Observation (CORRECTED DURING INSPECTION): Bean sprouts stored in water at 20C. The operator stated that they have been stored in water for 2 hrs.
Corrective Action(s): Store the bean sprouts in ice water during peak lunch/dinner time. Store bean sprouts inside the cooler at 4C during off peak hours. Do not store bean sprouts at room temperature for >2hrs.

Observation: - Rice scoop stored directly on top of the rice cooker.
- Multiple food items stored uncovered inside the freezer/coolers.
Corrective Action(s): - Store rice scoops inside ice water.
- Cover all food items with plastic wraps or lids.

Observation: - Greasy floors in the kitchen.
- Food splatters on the walls near the service station.
- Build up of grease on the bottom of the upright cooler with sliding doors in the kitchen.
- Build up of grease on ventilation hood covers at the fry/grill station.
Corrective Action(s): Clean the areas noted above. This will be checked during the next follow up inspection.

Observation: Missing working thermometers inside coolers.
Corrective Action(s): Provide a working thermometer (ie NSF certified) inside all coolers (upright coolers with sliding doors, prep cooler). Recommended in freezers.

Comments

- General sanitation is satisfactory.
- Handwashing stations supplied with hot/cold running water, soap, paper towels.
- High temperature dishwasher achieved 73.3C at the plate's level during the final rinse cycle.
- Surface sanitizer available in white bucket in the main kitchen at 100ppm bleach concentration. Store wiping rags inside the sanitizer while not in use. Do not store directly on the counter top.
- Dry storage area has adequate space.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.
- No signs of pest activity. A third party company inspects on a monthly basis.

Temperature control:
- All coolers at < or = 4C
- All freezers at < or = -18C
- Hot holding units between 60-70C
- Immediately begin daily temperature log for all coolers/freezers/hot holding units. This will be verified during the next routine inspection. Template provided.
