Observation (CORRECTED DURING INSPECTION): As per staff, in-use utensils were only washed and sanitized at the end of the shift.
Corrective Action(s): Discussed with the staff the importance of switching out and washing in-use utensils at least every 4 hours, if not more often when noted soiled, throughout the day. This breaks the cycle of bacterial growth and toxin productions if in-use utensils have been contaminated. Remind all staff to start this practice going forward.

Observation: Black buildup noted around the ice bin - not in contact with ice. Black organic buildup also noted around the front of house handwashing sink.

Routine inspection conducted today:
Hand wash stations, including staff washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Cooked pearls are kept at room temperature with time tracking in place - discarded every 4 hours.
Drain plugs available for the 3-compartment sink - staff was knowledgeable of the proper method for manual warewashing.
Sanitizer spray bottle available - 200 PPM QUAT detected.
Staff onsite at the time of inspection has a valid FOODSAFE level 1 certificate.
No signs of recent pest activities noted during the inspection.
