306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Minor dust build up noticed on the fan and tubelights in the walk-in cooler. Some rust noticed on the green storage shelves underneath the fan unit.
Corrective Action(s): 1. Clean all walk-in cooler surfaces to remove dust. ( Dec. 4, 2019)
2. Replace or refinish any rusted food storage shelves ASAP.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1. Tray rack located in the walk-in cooler has old aluminum foil covered in rust and mould. Paint is deteriorating on the entire rack.
2. Dry storage shelves not easily cleanable.
Corrective Action(s): 1. Replace the pan shelving rack with a new one made of food-grade, smooth and non aborbent material ( Aluminum or stainless steel) ( By Dec. 10, 2019).
2. Replace the existing shelving with stainless steel shelving on wheels to allow for easy cleaning of shelves and the floor underneath ( ASAP).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Internal temperature of food items in the top inserts of the line cooler ranged from 7-8 C ( Lunch rush).
Corrective Action(s): -Do not double stack steel pans/inserts on top of each other.
-Do not fill inserts to more than half full
-Adjust as necessary so that all food items are maintained at 4 C or below.

Comments

* Do not use any rodent bait granules in dry storage area. Recommended only using non-chemical means of pest control such as snap traps or live traps inside the restaurant.
* Do not store mop buckets in the dry food storage area.
* Door seals on the line cooler are deteriorating and need replacing.
* Quats sanitizer ( D10) tested 150 ppm. Re-calibration required so that D10 is dispensed at 200 ppm ( immediately).

The restaurant is slated for renovations/updgrades The following principles should be observed when determining renovation priorities.
Please refer to Canada Food Retail and Food Services Code (2016) for further guidance.
-Floors, walls and ceiling must be smooth, non-absorbent and easy-to-clean.
-Refrigeration equipment must be able to maintain all food items (including food toppings/dressings in top inserts/pans) at 4 C/40 F or colder at all times.
-A mop/janitorial sink is required. Consider converting one of the staff washrooms to a mop/janitorial room equipped with a ground level mop sink.

The plans and specifications for renovations must be submitted to our office for approval prior to making any changes to the premises.
