Observation (CORRECTED DURING INSPECTION): Cups/mugs were being washed in front service area sink rather than the dishwasher. Sanitizer was not being used.
Corrective Action(s): Staff were instructed to take all cups/mugs to dishwasher to be re-washed and sanitized at the time of the inspection. Ensure this all food contact surfaces and utensils are properly washed and sanitized after every use.

Comments

-Premises maintained in a sanitary condition
-Hot and cold running water available
-Handsinks supplied with liquid soap and paper towel
-Walk-in cooler was at 1C. Food items were covered and stored in manner to prevent contamination.
-Walk-in freezer was -13C
-Line coolers were <4C. Thermometers present for monitoring temperatures.
-Upright freezer was -12C
-Dishwasher met sanitizing requirement. 100ppm chlorine residual detected on dish surface after dishwasher cycle.
-Wiping cloths stored in bleach sanitizer solution (200ppm chlorine) for use on counters
-No signs of pest infestation at the time of the inspection. Pest control contract in place with monthly service. Service report for Dec. shown at the time of the inspection.
-Screen in place at back door to kitchen.
*Some light fixtures were missing covers in the kitchen. Replace covers or replace bulbs with those with shatterproof sleeves.
*One unsealed wooden shelf noted covered with aluminum foil. Remove foil and paint/seal wood so that it is washable and impervious. All surfaces must be maintained in this condition.
