Observation (CORRECTED DURING INSPECTION): Medium size pot and small pot of fish soup sitting at room temp on stove top (element is off). Noted at 45 C and 50 C ambient temp. Operator was on break and turned off elements.
Corrective Action(s): Ensure all PHFs are maintained at or above 60 C at all times including when staff go on break. Do not turn off elements. If PHFs are left below 60 C for more then 2 hours it must be discarded. If under 60 C for less then 2 hours it must be re-heated to > 74 C before being maintained above 60 C to be hot held again.

Observation (CORRECTED DURING INSPECTION): 1. Ice machine interior noted with dark liquid splashes on walls
2. Single service mid-size and some small size white sauce containers noted with noticeable food debris - slimy to the touch.
3. Plastic re-usable beverage shakers drying on shelf in bar face down on slimy shelf surface - slimy to the touch
Corrective Action(s): Ensure all food contact surfaces and dishware are maintained in sanitary condition. Wash and sanitize all these areas. Re wash dishware in commercial dishwasher. These areas should be visibly clean and dry to the touch after air drying.

1. Bubble tea lid sealer - black grim build up
2. Lower shelves and hard to reach areas between cooler/cabinets and under prep sink/ ice machine in bar area.
3. Caulking along the top part of the dishwashing sink and wall left of the dishwasher - mold and slim growing
Corrective Action(s): Ensure the above areas are added to routine cleaning schedule.

-chemical dishwasher in good working order; detected 100 ppm of chlorine after final rinse cycle
-no sign of pests noted at the inspection
-sanitizer bucket with wiping cloths noted 100 ppm chlorine
-back door closed during inspection - outside back door maintained in sanitary condition
-general sanitation maintained
*Reminder to keep ice scooper out of ice unit in sanitary manner when not in use
