Observation: Two door dairy/egg cooler air temperature is at 6C and food temperature (taken between packages of bacon) is at 6C.
Corrective Action(s): Adjust, clean or service the dairy /egg cooler so that it can keep potentially hazardous foods at 4 C /40F or colder. If it cannot, then store eggs, milk, and meat products in alternate cooler at 4 C or colder and check temperatures with accurate thermometer. Note also: Ready to eat sausage in reach in cooler - Watch "freeze by" dates.

Observation: Operator states that the hand washing sink used by food handlers is the washroom hand sink. Today, the faucet at the third sink in the produce washing and cutting room is broken.
Corrective Action(s): Food handlers washing produce and cutting/wrapping produce require a designated hand sink that is not the washroom hand sink. This is to protect produce from contamination. Repair faucet at third sink so it can be used for hand washing. A barrier between the 2nd and 3rd sink is recommended due to concerns about protecting food in sinks from hand soap.

Comments

Grocery/produce store with cutting and packaging of produce (vegetables and watermelons) on site.
Cut melons are being stored in fridge.
Tofu reach in display cooler - temperature 4C/40F after possible defrost cycle. Do not overstock display cooler as this will make it hard to keep all food cold. Clean dust from air return.
- Watch dates (such as freeze after dates). Items past "freeze by" dates removed from cooler by operator (do not sell).
Upright milk and egg cooler - see above.
Water melon
Poultry - reviewed approved source of poultry.
Hand washing sink for food handling staff - faucet is broken - see above.
Hose in water at double sink - verify that there is a backflow preventer for hose attachment (or air gap). Hose is to be "food grade".
Sinks - 2 sinks available for washing and rinsing cutting boards and knives before use (wash, rinse, sanitize, and air dry after use and every 4 hours if used continuously).
Chlorine sanitizer in spray bottle has 100ppm chlorine - good. This can be used on sinks (prior to be used as a food sink), prep counter, cutting boards, etc.
Staff washroom - has hot/cold water, liquid soap, and paper towels. This is to be used by staff to wash hands after using the washroom and not as a hand washing sink used by food handlers.
Pest control - as per previous inspections, keep back door closed so pests cannot enter and remove unneeded items to help with pest monitoring.
