- 200ppm QUAT sanitizer available
- Temperatures of refrigeration units are adequate (<4C coolers, <-18C freezers)
- High temp dishwasher reached 72C at plates' surface
- Temperature monitoring & recordkeeping is conducted consistently
- Sushi rice is acidified with the same recipe
- As per the operator, the fresh sashimi from Japan are farmed fish/sushi-grade
- Pre-made sunomono and salads left at room temperature are sold within 2 hours. Ensure to discard them if not sold within 2 hours as they are potentially hazardous foods.
