Observation (CORRECTED DURING INSPECTION): Two buckets of bleach sanitizer solution did not contain enough bleach (0 ppm and 50 ppm chlorine sanitizer was measured). 3 spray bottles was measured at above 200 ppm of chlorine.
Corrective Action(s): Staff was instructed to make a bleach sanitizer solution at 100 ppm bleach. Chlorine sanitizer in the spray bottles were re-made and measured at 100 ppm bleach at time of inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): A bucket of pickled jalapenos covered with plastic wrap had a hole in the plastic wrap and a pool of water was found on top. The bucket was stored below packages of raw red meat. It appeared that water was dripping from cooler above and landed on the bucket of jalapenos.
Corrective Action(s): Discard the jalapenos. Operator was instructed not to place ready-to-eat food items below raw meat.

Observation: Mice droppings were found in dry storage area at the back beneath the onions, flour (in paper packaging)
Corrective Action(s): Remove mice droppings. Disinfect the area with bleach solution.
Store flour (in paper packaging) into a container with a proper lid.
Correction date: 2 weeks.

Observation: The walk-in cooler at the back had a grate cover and floor that appeared uncleaned.

Observation (CORRECTED DURING INSPECTION): 3 bottles of bleach sanitizer did not have a label.

Comments:
-Cooler in front was 5 deg. C. Ensure coolers at 4 deg. C.
-Freezers in front were measured from -5 deg. C to -16 deg. C.
-Coolers in the kitchen were 1 deg. C to 2 deg. C.
-Freezers in the back were from -8 deg. C to -23 deg. C.
-Handsinks were supplied with liquid soap, paper towel and hot and cold running water.
-Observed ice wand in use for cooling food. Batches of cooked chicken was covered with aluminum foil and a opening in the corners of the metal tray was made to allow cooling. Operator was instructed to lay the chicken one by one in a single layer on a flat tray uncovered to allow rapid cooling instead.
-Dishwasher was functioning and met chemical sanitizer requirement. 100 ppm chlorine detected on dish after dishwasher cycle. Test strips were present for monitoring.
-Pest Control contract in place with monthly service.
-2 wooden spoons were found in a condition that did not allow for proper cleaning and sanitizing. Operator was instructed to throw out the wooden spoons. (The wood had peeled fibres)
-The meat slicer was found uncleaned. Operator mentioned that the equipment was cleaned after each use. The equipment was cleaned at time of inspection.
