Observation (CORRECTED DURING INSPECTION): No santiizer was available in food re-packaging area at time of inspection.
Corrective Action(s): A spray bottle with 200 ppm chlorine residual was made and work surfaces were sanitized. Employee was instructed on how to properly dilute bleach (1 capful per litre of water).

Comments

Routine inspection conducted. Facility is in very good sanitary condition. The following observations were made:

1. Temperatures
- Display coolers in customer area at 4C
- Walk-in cooler at back at 4C
- Stand-up freezers at -20C

2. Hygiene and Sanitizing
- Handwash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- 2-compartment sink available for washing, rinsing, and sanitizing. Operator reminded that all utensils used on foods served to the public should be washed and rinsed in one compartment, and then sanitized in the second compartment with 200 ppm chlorine residual
- Meat slicer in sanitary condition at time of inspection. Remember to disassemble and sanitize with bleach solution after it is cleaned
- NOTE: In addition to the spray bottle at the back, please add another bottle of sanitizer at the front near the meat slicer area

3. Storage
- All items are elevated at least 6" off floor
- Metal storage racks are in sanitary condition
- All food items in storage and for sale are covered in food-grade seran wrap
- Expired goods are stored on separate shelving
- Note: Sausages and some meat products inside stand-up cooler do not have labels. Invoice for items (supplier: Wescadia) purchased were shown at time of inspection. Please add a label to all items that are sold in the future.

4. Pest Control
