- Freezers at -17 to -25 degrees C
- Internal temperature of hot held potentially hazardous food at 60 degrees C or more
- Cooling racks and ice wands available for proper cooling of potentially hazardous foods
- Food is protected from potential contamination. Raw and ready to eat foods are well organized.
- Hot and cold running water, liquid hand soap, and single use paper towels available for hand washing
- Staff observed to be properly washing and drying hands at time of inspection
- High temperature dishwasher measured 79 degrees C at utensil surface during final rinse (minimum 71 degrees C at utensil surface).
- Quaternary ammonium compounds (quats) sanitizer available in labeled spray bottles, buckets, and from dispenser at 200 ppm.
- No signs of pest activity observed at time of inspection
