209 - Food not protected from contamination [s. 12(a)]
Observation:
1.Food is being stored on the floor in boxes and containers located in the kitchen and walk in coolers.
2.Old food debris was found on packages goods in the walk in cooler.
3.Raw beef patties were stored on top of containers of rasmalai ready to eat desserts in the walk in freezer.
Corrective Action(s):
1. Do not store food on the floor. Ensure all food is stored at least 15 cm off the ground. Correction required today.
2. Ensure all food products are kept in a sanitary manner. Clean all food containers and old food debris. Correction required in 1 week.
3. Always store ready to eat foods at the top of cooler units and contaminated foods, such as raw meats on the bottom. Correction required immediately.

Observation: Walk in freezer observed with food at -4C (beef patties).
Corrective Action(s): Ensure all frozen foods are stored at -18C or below. Repair cooler to ensure proper temperatures are met. Correction required in 2 weeks.

Observation: Extensive cleaning is required throughout the food establishment as old grease and food debris is evident in the following areas:

1. Walk in cooler
2. Walls of the kitchen
3. Floor of the kitchen
4. Storage area on shelves and floor
5. Hard to clean areas such as behind the dishwasher, stoves, deepfrier and inside coolers
Corrective Action(s): A thorough clean of these areas is required. Ensure to include sanitation of hard to clean areas as part of the cleaning schedule. Correction required in 2 weeks.

Observation:
Many items are in not good working and were noted in previous inspections:
1. Back screen door is damaged and requires repair. Door is closed during winter time.
2. Damaged floor tiles near the cooking area.
3. Floating and damaged FPR along the dishwasher area.
4. Walk in freezer is not at -18C or below and there is a build up of ice inside the unit.
Corrective Action(s): Apply repair to these items and ensure maintenance is kept up to ensure a safe and sanitary operation. Correction required in 3 months.
