Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] (Checked temperature of new deli cases that were installed. Hot - cold island case was maintaining foods at 6.7°C → 10°C. Foods in case were voluntarily discarded at time of inspection.)
Comments

- Roast beef cooking and hot holding procedures to be reviewed. Ensure that roast is maintained at 60°C (140°C) or hotter. Ensure that is cut into smaller pieces to assist in cooling.
- Dishwasher now has detergent connected to it and does not require manual addition.
