Comments:
* Observed fruit flies present in front service area. These can contaminate foods. Please ensure that the problem is addressed promptly.
* Operator advised that air intake on cooler is not working and it is in the process of being repaired. Please monitor to ensure that foods are effectively cooled.
* Observed that the ventilation exhaust hood above the pizza oven was due for service. Please ensure that it is serviced ASAP to ensure no build-up of grease and accumulation of fumes
- Quats was at 400ppm, available in buckets and spray bottles - max allowable 200ppm. Lower to 200ppm.
- Low temp dishwasher had 200ppm chlorine upon final rinse cycle - max allowable
- Glasswasher (bar) had 25ppm iodine - max allowable
- All (other) coolers (than above) working at 4C or less; thermometers in place.
- All freezers were working adequately
- All hot-holding was at 60C or above
- Handsinks had hot and cold water, liquid soap and paper towel
- Temp and sanitizer logs kept and in-use
- Storage of foods are good; protected from contamination, labeled w/ dates and likes grouped in likes
- General sanitation is good. Some hard to reach areas could use extra (minor)
- FoodSafe certified staff present.
