Observation (CORRECTED DURING INSPECTION): Foods are still not being cooled properly. Cooked potatoes are placed in the inserts while they're still around 40degC. Broth is being kept out at room temperature. Discard the broth if it's been out for over 2 hours..
Corrective Action(s): Inserts cannot be used to cool foods down. They only keep cold foods cold. Once the potatoes are cooked, let them cool at room temperature for an hour or so and then once they're around 25 degC, place them inside a cooler (not an insert). Once they've cooled to under 4 degC, then move it into the insert.
