Observation (CORRECTED DURING INSPECTION): In-use utensils were noted stored within a large container filled with standing water.
Corrective Action(s): **Note: This is a repeated violation** Bring the utensils to the back for washing and sanitizing.
Moving forward, only store in-use utensils in either a clean empty container, ice water or temperature control (either less than 4.0C or higher than 60.0C) method.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Large amount of ice buildup noted in the upright freezer.
2. > 200 PPM chlorine residual detected in one of the sanitizer spray bottles.
Corrective Action(s): 1. Defrost the upright freezer. Excess ice in the freezer could be a possible source of contaminants for food stored within the unit. Ice in the freezer could also impede the proper functioning of the equipment.

2. **Issue corrected at the time of inspection** Operator diluted the sanitizer spray bottle. After diluting the spray bottle, 200 PPM chlorine residual was detected.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Black organic buildup noted on the handle of the dish sink sprayer. Black and pink buildup noted on the hose for the wall mounted detergent dispenser.
Corrective Action(s): Clean and sanitize any areas noted with organic buildup and maintain sanitary at all time. If the hose cannot be cleaned and sanitized, please switch out to a new hose.

Observation: Plastic bag used in the upright freezer for storing dumplings.
Corrective Action(s): Transfer the dumplings to a food-grade container and discard the plastic bag. Plastic bag cannot be washed and sanitized and therefore should not be used for food storage.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Front of house handwash sink was not draining at the start of inspection. Then leaking was noted from the pipe below, spilling into the cabinet unit. As per operator, sink did not have an issue as of yesterday.
2. Leaking noted from the faucet handle in the back of house handwash sink.
Corrective Action(s): 1. All food contact items in the cabinet below this handwash sink were not contaminated and moved to another sanitary location for storage. Going forward, do not store food or food contact items under sinks.
Operator will need to fix the sink as soon as possible so that all handwash sink are properly functioning without leaking. For the time being, they will use the sink in the kitchen area, around the corner from the front of house area.
2. Fix the leaking noted from the back of house handwash sink.

Routine inspection conducted today:
Handwash stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
Freezer unit was at -18.0C.
Rice was being hot held at over 60.0C.
No signs of pest activities noted during the inspection.
50 PPM chlorine residual detected from the low temperature dish machine.
General sanitation and organization satisfactory.
