Observation (CORRECTED DURING INSPECTION): High temp mechanical dishwasher was run multiple times and recorded at a max temperature of 89F during rinse cycle which can result in adequate sanitation of dishes. Staff called the technician at the time of inspection. In the mean time, dishwasher will be used for conducting wash and rinse step and 200ppm bleach solution will be used for sanitizing step. Staff prepared the sanitizer solution and demonstrated manual dishwashing and was found satisfactory.
Corrective Action(s): Ensure that all the utensils/dishes are adequately washed & sanitized.
Repair the high temp mechanical dishwasher immediately. The temperature on the calibrated display gauge for rinse cycle should read atleast 180F.

Comments

Routine inspection conducted. Improvement noted in terms of general operation and maintenance of the kitchen.

- Temperature of walk in cooler at 4C
- Walk in freezer at -13C
- Stand up cooler in kitchen area at 4C
- Food storage practices were found satisfactory.
- 200ppm bleach solution was present. Good.
- 3 compartment dishwashing sink available.
- Staff was refilling the lentil bulk bins in dry storage room at the time of inspection. Please clean up the spills on the floor once all the bins are refilled.
- No signs of pest activity observed.
- Mechanical trap was present in the dry storage room.
- Hot potentially hazardous food was hot held above 60C.
- Staff stated the hot potentially hazardous food stored at room temperature are served within 1-1.5 hours.
- Vegetable dicer was found in sanitary condition. Staff stated that it is cleaned and sanitized after use. Good.

Recommendations:
- Vents require regular cleaning to prevent build up.
- Single use paper towels should be used for wiping wet hands. Air dryer in the food prep area can result in potential food contamination from water spills.
- Always store food/utensils at least 6 inches off the floor.

NOTE - A follow up inspection will be conducted tomorrow to ensure that the dishwasher has been repaired.
