Observation: Rodent droppings were observed in the following spots:
- Under the shelving at the front service area.
- Under the shelving used for dry storage in the back kitchen area
Corrective Action(s): 1. Remove the droppings and disinfect the floor/affected area with 1 part bleach to 9 parts water solution. Use proper PPE during cleaning.
2. Regularly clean and monitor these areas for any new pest activity.
3. Notify your Pest Control Company about the issue and to implement appropriate control measures.
4. Keep the floors/facility free of any food debris that could attract rodents into the facility.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. One door of prep cooler does not seal properly. This could result in inadequate cold air circulation within the cooler and may affect the ambient temperature at which the food products are stored.
2. Handwash sink at the front has some leakage issue underneath.
Corrective Action(s): Service/repair both the equipment and ensure that all the equipment in the facility are maintained in good working order.

Comments

Routine inspection conducted.

- Temperature of all coolers including walk in cooler, prep cooler, front display cooler and beverage cooler recorded at or below 4C.
- Temperature of freezers including front chest freezer, 2x chest freezers located in walk in cooler & 1 in food prep area recorded at or below -18C.
- No hot holding was conducted at the time of inspection.
- Handwash sink at the front and food prep area had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- Food handling and storage practices were found satisfactory.
- Low temp mechanical dishwasher dispenses 50ppm chlorine residual. Operator has chlorine test strips onsite.
- 3 compartment dishwashing sink present.
- 200ppm bleach sanitizing solution was available in sanitizing pail.
- Facility was maintained in excellent sanitary condition. Deep cleaning has been conducted throughout the facility.
- Pest Control Company conducts routine checks.

Recommendations:
- Focus on the pest issues in your facility and take immediate action to control it.

Overall, facility is well maintained. Huge improvement noted in terms of general sanitation and operation of the facility.
