Observation: * Some boxes being stored above food preparation areas in both kitchens that require reorganization so that they are below food prep areas to reduce risk of cross contamination. Also, food found uncovered in bar area coolers. Operator immediately covered these foods. Also, glassware stored in coolers need to be covered to protect them from contamination while being stored.
Corrective Action(s): * Ensure all boxes stored below food preparation areas to reduce risk of cross contamination. Items in boxes can also be stored in washable/sanitizable containers too and then on upper shelving. Ensure all food and glassware covered in storage areas to protect them from contamination

Observation: * Some build up of grime/debris noted through out both kitchens along back walls, baseboards and door ways that requires immediate cleaning attention for sanitary maintenance
Corrective Action(s): * Ensure all areas with build up of grime/debris properly cleaned/sanitized through out both kitchensn and maintain in clean/sanitary manner

* Dishwasher (high temperature) was found to be 74'C/165'F or hotter internally
* Glass washer in bar was found to have final rinse of 50 ppm chlorine residual at glass surface internally
* Cold-holding units were found to be 4'C/40'F or colder
* Freezer units were found to be -18'C or colder
* Sanitizer was available and at 200 ppm quaternary ammonium concentration; rags were being stored in sanitizer between use
* Organizational improvements noted overall; continue with organization and maintenance in all areas of kitchens
* Monitoring records were available(for temperature/cleaning monitoring checks)
* Food was covered and dated/labeled
