308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Sandwich prep cooler serviced Aug 9 by FRS Air Conditioning; service invoice indicated condenser coil, fan blade and cooler compressor were cleaned. However post-service staff still noticed insert temperatures (temperature logs kept) were still > 4 C, another service call was placed in. At time of inspection, a service technician was working on cooler. Minimal food was kept in inserts (~1/5 depth) but product surface temperatures ranged 6 to 10 C. EHO returned after 1.5 hours but technician had left. Staff advised a brand new condenser unit will have to be installed and technician would be back in 1 hour with unit. Staff had supplemented inserts with ice, product temperatures ranged 4 to 6 C. This is okay as staff have been continuously monitoring temperatures, keeping insert levels low, however IT IS NOT acceptable long term. Also, food must be turned over within 1.5 hours during this time. Follow-up will be conducted tomorrow. Corrective Action(s): Violation Score: 9

From last routine: Fly lamp installed --> noticeable reduction in fly activity. Staff have registered for foodsafe class (email receipt shown). Mop sink leak has been repaired.
